Cheesy Tortellini and Sausage Skillet


I ate this bite and behold, it was very good.

The weather’s turnin’ cold, folks!  Time for something warm and cozy, says I.

Cheesy Tortellini and Sausage Skillet?  Yep.  That sounds about right.

I’ve seen variations of this dish all over the interwebs and decided to make my own rendition.  One thing I love about it is how easy it is to add whatever random veggies you’ve got in the fridge and no one will be the wiser.  Well, within reason.  And as for prep, who doesn’t love a one dish wonder?  This dinner comes together in about 30-45 minutes and the clean-up is a breeze.  Your family will love this one, so why not give it a try?

Cheesy Tortellini and Sausage Skillet
Serves 8


2 Tbs olive oil
1 package chicken kielbasa, sliced into 1/4″ slices
1 medium onion, diced
1 tablespoon minced garlic
3/4 cup white wine
1 1/2 cups chicken broth
1-28 ounce can crushed tomatoes
1 1/2 tsp salt
1/2 tsp ground black pepper
1 teaspoon dried Italian herb blend (Or, if you have fresh herbs, use them!  Basil, oregano, and rosemary are delicious in this dish!)
1-20 ounce package cheese tortellini
1/2 cup cream
3 ounces grated Colby Jack cheese
3 ounces grated Cheddar cheese
3 ounces chopped fresh spinach

Heat the oil in a large skillet over medium-high heat and add the sausage.  Sauté until lightly browned on both sides and then add the onion and garlic.  Continue cooking and stirring frequently.  Once the onions are starting to soften a bit, pour in the white wine and deglaze your pan by scraping up any browned bits on the bottom of your skillet.  Allow the wine to reduce by about half and then carefully add the chicken broth, crushed tomatoes, salt, pepper, and herbs.  Stir well to combine and then fold in the tortellini.  Reduce the heat to medium-low, cover your skillet, and simmer for about 15 minutes, or until the tortellini are cooked.  Finally, fold in the cream, cheeses, and chopped spinach.  Cook for another 5-10 minutes until everything is gloriously bubbly and serve hot.  Enjoy!
